Every once in a while I get asked for ideas for vegan lunch ideas, in particular from mums, for packed lunches.  Many kids are interested in vegetarianism and that is hugely exciting. To work with the younger generation is a fulfilling part of my work.  My Tasty Tips for Kids Workshop is one of the many I love to teach.

Tofu is such a versatile food and can be used in a multitude of ways.  Many health stores now carry cooked and tasty marinated tofu so you don’t even have to prepare the tofu.  Simply slice and serve.

This sandwich filler below virtually takes minutes to assemble.  Enjoy.

Tofu Steak Baps

1 pack organic smoked tofu

1 tbsp sesame oil

Splash Shoyu sauce

Seeded Baps

Slice the tofu into 4 pieces. Heat a heavy based pan and warm the oil. Fry the tofu steaks for 2-3 minutes. Turn over add a splash of shoyu (natural soy sauce) and fry for a few more minutes.

Spread some vegan mayonnaise on a toasted seeded bap, dress with some lettuce leaves and shredded carrot. Place two of the tofu steaks on top and add some roasted onion and pepper relish.

A delicious and quick way to enjoy a tasty sandwich.
