Vegan Christmas Treats


As we head towards Christmas, I look forward to welcoming you all to this fun and festive workshop.  For those of you who do not live in Ireland, please enjoy one of my recipes below from my Vegan Christmas Treats menu.

These ‘treats’ all make wonderful gifts for family and friends, wrapped in tissue, boxed or ribbon tied, they look delightful.  For me, there is nothing to beat giving or receiving gifts made by one’s own fair hand, so on that note, time to get the ‘knitting needles’ out and get the ‘husband’ a Christmas sweater on the go! haha.

These delicious treats are, and should be used only as ‘treats’ for special occasions and not as a ‘daily’ edition to an already unhealthy diet.  They are rich in taste and in calories so your dopamine receptors will be singing and dancing!

If our appetites are driven by our dopamine reward system we are no longer making conscious choices regarding foods, therefore, I feel it is important to explain here that dopamine as a neurotransmitter helps control the brain’s reward and pleasure centres.

The more ‘sweet’ calories you feed yourself the more dopamine will be released and the more ‘sweet’ you will crave, even for days afterwards so don’t overindulge! (as if)!   Dopamine also helps regulate movement and emotional responses, and it enables us not only to see rewards, but to take action to move toward them.  So on that happy festive note, go make some fudge.

Seriously “Fudgy” Fudge

1 cup melted cacao butter

1 cup maple syrup

½ tsp. vanilla powder

Pinch sea salt

1 cup cacao powder

1 cup white almond butter

¼ cup cacao nibs

½ cup goji berries

½ cup berry mix (tangy)

1/2 cup desiccated coconut

Blend all ingredients in a high speed blender except the berries cacao nibs and coconut.  Transfer to a bowl and stir in the berries, cacao nibs and coconut.  Spread the mixture onto a parchment paper lined baking tray and if you like sprinkle some more cacao nibs or berries on top.  Freeze until set.   Cut or break into bite size pieces and keep stored in a glass dish in the refrigerator. Sticky and moreish but deliciously decadent.
