ArameSea Vegetables – Arame with Onions & Toasted Walnuts

Spring has finally arrived.  It is my favourite time of the year.  I simply adore seeing all the new shoots appearing on trees and shrubs as nature comes alive.  We as humans, also come alive from the long darker months of winter.  It is therefore important to use certain foods and tastes to stimulate our Liver and Gallbladder.  Many people tend to go overboard with liver cleansing when there is absolutely no need.  Simply use sparingly some lemon juice or lemon zest, a splash of good quality vinegars such as Clearspring Ume plum seasoning or brown rice vinegar and your liver will be happy.

As a proponent of sea vegetables for four decades, these nutritionally and amazing foods should be a part of everyone’s diet.  They are loaded with minerals, taste amazing and are such a versatile food.  Try this delicious dish scented with fresh lemon zest and toasted walnuts.

2 onions, finely sliced

1 cup Clearspring arame, rinsed and soaked in cold water for 15 minutes

Lemon rind, finely grated

1 tsp. Clearspring Olive oil

Pinch of sea salt

1 tbsp. Clearspring Soya sauce

1 tbsp. Apple juice concentrate

Toasted walnuts for garnish

Sauté the onions with some olive oil and a pinch of sea salt for 15 minutes uncovered until they are translucent and have a rich aroma.  Add a splash f water if the pan is dry.  Drain the arame and add to the onions, together with ½ cup of water.  Cover and simmer gently until all the water has been absorbed, approximately 20 minutes  Season to taste with some Soya sauce, apple juice concentrate and lemon rind. Garnish with toasted walnuts.
