Sweet & Sour Azduki Beans with Nori Bake

Ingredients

Sweet & Sour Azduki Beans

2 cups Clearspring azduki beans (cooked)

1/4 cup Clearspring shoyu (natural soy sauce)

1/4 cup Clearspring apple cider vinegar

1/4 cup Clearspring rice malt syrup

2 onions, thinly sliced into half moons

Nori Bake

2 cups cooked short grain brown rice

1 tbsp Clearspring brown rice vinegar

1 tbsp Clearspring rice mirin

6 cups your choice of vegetables cut very finely

Directions

For The Beans

1Mix the beans with the other ingredients in a bowl, blending well and then transfer to a baking dish. Cover the dish and bake in a medium hot oven for 30 minutes. Remove the lid, if the beans look dry add some water and bake for another 10 – 15 minutes. The onion and beans should be soft to the bite.

2Serve with a portion of nori bake, steamed greens and pickles.

For The Nori Bake

1Heat a wok with some toasted sesame oil. Add your vegetables and a pinch of sea salt, let sweat for around 5 minutes or so. Add a splash or two of shoyu and rice mirin and cook for a further two minutes.

2In a large square dish or (sushi press) if you have one, (I do) place a sheet of nori on the bottom, add a layer of the rice, then a layer of the vegetables and (tofu if using) and then top with another layer of rice. Press down hard with your wet hands to pack the ingredients. Using a cutting board to cover the dish, flip the nori sushi over then cut into squares.

3Garnish with some crispy onion pieces. Serve as is or with the sweet and sour adzuki beans for a delicious meal.

4Note: When I am serving my nori squares without the beans I add baked tofu slices. Makes a delicious lunch.
