Marlene’s Chocolate Chip Cookies

3 cups blanched almond flour

1/2 tsp sea salt

1/2 tsp bicarbonate of soda

1/2 cup chopped pecans or other nuts (optional)

1/2 cup Clearspring organic safflower oil or Clearspring apple sauce (if you prefer no oil)

1/2 cup Clearspring Rice Malt Syrup

1 tbsp vanilla extract

1/2 cup grain sweetened dairy free chocolate chips (naturally sweetened)


1Combine dry ingredients in a large bowl and stir together wet ingredients in a smaller bowl. Mix wet ingredients into dry.

2Pinch off a piece of the mixture and form into small balls and press onto a parchment lined baking tray, use a fork dipped in water for pressing into cookie shape.

3Bake at 180c/360f for 10 minutes. Cool and serve.
