1Pour the juice into a small saucepan and add the salt. Sprinkle the agar-agar flakes on top. Heat without stirring and then simmer for 3-5 minutes, stirring occasionally until the flakes dissolve.
2Remove from the heat and place the fruit in whatever moulds you have chosen. Pour over the hot liquid, allow to cool and then place in the refrigerator to set. Serve as is like a soft jelly or puree to a mousse as I have done here. Delicious either way.
3Note; soft fruits such as berries, cherries, peaches or melons do not need to be cooked with agar- agar. However, firmer fruits such as apples or pears need to be peeled, chopped and cooked in the agar- agar and juice mixture to soften them.
4I encourage all my clients to use this healthy dessert. Agar Agar is a natural gelatin made with sea vegetables.
