Caramelised Baked Pumpkin

1 pumpkin, peeled, de-seeded, and cut into bite-sized pieces

Organic olive oil

Sea salt

2 tbsp maple sugar


1Cut pumpkin into cubes and coat with olive oil. Sprinkle on sea salt and maple sugar. Bake for 15 min at 250c/425f covered with foil and then reduce to 220c/400f with the foil removed for further 10 minutes until the pumpkin caramelizes. Arrange the pumpkin pieces on a plate with some toothpicks inserted into the centres, makes a great tasty bite or a side dish.
