Alternate the nuts or use a mixture of walnuts, hazelnuts, etc., for a different taste. As I am often out and about during the day teaching or doing health counselling, these are my travel snack along with some kukicha tea to keep my blood sugar levels in tip top condition. We often deprive ourselves of something ‘sweet’ worrying that it will pile on the pounds. No need to worry with these delicious healthy snacks.
1 cup pecans or almonds (pulverized)
2 tbsp chia seeds
2 tbsp desiccated coconut
1 tbsp Cocoa powder
1 tsp lemon zest
2 tbsp rice syrup
1 tbsp barley malt
Mix the dry ingredients together in a bowl and stir in the zest, rice syrup and barley malt. Pinch of a small amount and with wet hands roll into a ball. Place some desiccated coconut or cocoa powder in a cup. Drop one ball at a time in the cup and swirl around until covered. Place in a glass container and chill in the refrigerator.
