Green Soup with Ginger

Green foods are rich in chlorophyll and are the key to kick starting your metabolism.

They have a relaxing and detoxing effect on the liver.  As the weather turns cold and damp, warming soups should be an important part of your daily diet for nourishment and good immunity.  Get into the healthy habit of cooking up a batch of soups.

 

1 sachet Clearspring miso bouillon paste or 1 organic vegetable stock cube

1 x 6 inch piece Clearspring wakame soaked in a little water

4 cups filtered water

3 cups green beans chopped

3 cups courgettes chopped

3 cups celery chopped

1 cup onion diced

1 tablespoon crushed garlic

Small handful of chopped parsley

Juice from fresh ginger root

Clearspring White Miso to taste

Toasted Flaked Almonds

 

Mix the miso bouillon in 4 cups of warm water and place in a soup pot along with the chopped vegetables. Add the wakame and soaking water. Bring to a boil and simmer for 15-20 minutes until vegetables are soft.

Using a hand blender, or upright blender, blend until creamy adding water as needed to create the required consistency.   Grate some fresh ginger and squeeze the juice into the soup, approximately one tablespoon.   Add some white miso to taste, by simply adding one heaped tablespoon to the hot soup and stir until dissolved.  Top with some toasted flaked almonds.
