Christmas Recipes – Chocolate Covered Festive Granola Bars

Are guilt-free family treats on your wish list? This easy and delicious recipe is loved by all my family and friends.  

Increase the quantities below and make up a larger batch as they also freeze well.   Change the nuts and dried fruits that I have used if you desire to create your own unique taste.  

There are so many ways to have a healthy holiday without feeling deprived.  Enjoy.

 

Chocolate Coated Festive Granola Bites

2 cups organic oats

1/2 cup pecans, chopped

3 tbsp. chia seeds

⅓ cup rice malt syrup

2 tsp pure vanilla extract

2 tbsp. coconut oil

2½ tbsp. almond butter

1/2 cup dried cranberries

1 bar dark chocolate, 100% cocoa

Preheat oven to 170/350F. Arrange oats in a single layer on a baking tray lined with parchment paper and bake for 10 to 15 minutes. Set aside to cool and then transfer to a large bowl.

Christmas Recipes For Friends & Family

Stir in the chopped pecans and chia seeds.  In a small sauce pan, combine rice syrup with vanilla extract, coconut oil and almond butter. Simmer over medium low heat, stirring constantly until the mixture is melted.  Remove from heat and add cranberries. Pour mixture over oats and mix well.

Transfer  to a parchment lined baking tray. Refrigerate until firm.  Break the chocolate into small pieces and melt in a metal pan atop a pot with simmering water.  Using a pastry brush, paint the melted chocolate across the full length of the oat mixture, and sprinkle with coconut.  Place again in the fridge to allow the chocolate to set.  Cut into whatever size you like and place on a pretty bowl or plate.  They will be gone in an instant!

  1. Hi Marlene, thank you for the lovely recipe. I have tried with different ingredients as I didn’t have those you had in your ingredients list. I used walnuts, flax seeds, hazelnut butter and dried blueberries, the rest was the same. It came out delicious, and it just shows, how versatile this recipe is. Thank you again for the inspiration.

    This looks so yummy, thank you for posting it! Can you give me an idea of how many bars/squares the recipe makes? I’m trying to figure out how much of each item I will need to purchase and how many people one recipe will accommodate. Thanks so much.

    • Depends how thick u want them ……if u want bars or bites……from the quantities listed you will get 24 squares, just spread our on baking sheet to ur desired thickness.enjoy the holidays xxx ????????????????????????☀️
