Chocolate Coated Festive Granola Bites
2 cups organic oats
1/2 cup pecans, chopped
3 tbsp. chia seeds
? cup rice malt syrup
2 tsp pure vanilla extract
2 tbsp. coconut oil
2½ tbsp. almond butter
1/2 cup dried cranberries
1 bar dark chocolate, 100% cocoa
Preheat oven to 170/350F. Arrange oats in a single layer on a baking tray lined with parchment paper and bake for 10 to 15 minutes. Set aside to cool and then transfer to a large bowl.

Stir in the chopped pecans and chia seeds. In a small sauce pan, combine rice syrup with vanilla extract, coconut oil and almond butter. Simmer over medium low heat, stirring constantly until the mixture is melted. Remove from heat and add cranberries. Pour mixture over oats and mix well.
Transfer to a parchment lined baking tray. Refrigerate until firm. Break the chocolate into small pieces and melt in a metal pan atop a pot with simmering water. Using a pastry brush, paint the melted chocolate across the full length of the oat mixture, and sprinkle with coconut. Place again in the fridge to allow the chocolate to set. Cut into whatever size you like and place on a pretty bowl or plate. They will be gone in an instant!
