Chocolate Chip Cookies – Dairy & Sugar Free

Chocolate Chip Cookies

Who doesn’t love the smell of freshly baked cookies.  We all desire some ‘sweet’ in our life and these cookies are just perfect when you want to cosy up on the sofa on a cold night watching your favourite movie, pack in your lunch box or kids lunch box, or take on a road trip (as we do).  Heaven on Earth!

Chocolate Chip Cookies

3 cups blanched almond flour

½ teaspoon sea salt

½ teaspoon bicarbonate of soda

½ cup chopped pecans or other nuts (optional)

½ cup Clearspring safflower or avocado oil

½ cup Clearspring rice malt syrup

1 tablespoon vanilla extract

½ cup grain sweetened dairy free chocolate chips

Combine dry ingredients in a large bowl. Stir together wet ingredients in a smaller bowl. Mix wet ingredients into dry. Pinch off a piece of the mixture and form into small balls and press onto a parchment lined baking tray. Bake at 180c/360f for 10 minutes. Cool and serve. The avocado oil gives these cookies a delicious ‘buttery’ taste.

Yields around 20 cookies – Store in an airtight container (If they last that long)

Note; if you prefer to cook or bake without oil simply replace the oil with apple puree.
